Delicious fruit-filled cookies in a cake-like pastry, cut and shaped into X forms before baking.
Ingredients:
  • 4 cups all-purpose flour
  • 0.66666698455811 cup sugar
  • 1 teaspoon baking powder
  • 1 cup butter, cubed
  • 0.75 pound dried figs
  • 0.5 cup chopped almonds, toasted
  • 0.33333298563957 cup apricot preserves
  • 0.25 cup golden raisins
  • 0.25 cup chopped candied orange peel
  • 0.33333298563957 cup semisweet chocolate chips
  • 0.25 cup dark rum
  • 0.5 teaspoon ground cinnamon
  • 1 egg, beaten
  • 2 tablespoons milk
  • 0.5 cup confectioners' sugar for dusting
Instructions:
  • Combine flour, sugar, baking powder, and salt in a medium bowl. Use a pastry blender or your fingers to cut in the butter until well incorporated. Mix in the egg until a dough forms, which may take a couple of minutes. When the dough comes together, transfer it to a floured surface and knead briefly. Shape the dough into a long roll, wrap it, and let it rest.
  • Combine figs, almonds, apricot preserves, raisins, orange peel, chocolate, rum, and cinnamon in a food processor or blender. Pulse until finely chopped. If needed, soak the fruit in boiling water for 15 minutes to soften before processing if it's hard.
  • Preheat the oven to 350°F (175°C). Combine the remaining egg and milk in a small bowl to create an egg wash.
  • Divide the dough into 12 pieces, rolling each out into a 3x12 inch rectangle on a floured surface. Lightly brush the dough strips with egg wash. Spoon the fruit mixture down the center of each strip and fold the edges over, gently sealing. Cut each filled tube into 3-inch pieces. Make a 1-inch slit down the center of each end and spread to form X shapes. Place the cookies 2 inches apart on greased sheets.
  • Bake in a preheated oven for 15 to 20 minutes until the edges turn golden. Let cookies cool on the tray for 5 minutes to firm up, then transfer to wire racks to cool completely. Dust with confectioners' sugar once cooled.
