Quick onion soup with veggie broth, thyme, and brandy.
Ingredients:
  • 5.25 cups vegetable broth, divided
  • 4 onions, sliced
  • 0.125 teaspoon white sugar
  • 2 tablespoons all-purpose flour
  • 0.5 cup dry white wine
  • 0.5 teaspoon ground thyme
  • 1 tablespoon brandy
  • 4 slices French bread, toasted
  • 1 clove garlic, halved
  • 2 tablespoons grated fat-free Parmesan cheese
Instructions:
  • In a spacious non-stick saucepan, warm up 1/4 cup of vegetable broth. Add the onion and sauté over medium heat until golden brown, approximately 15 minutes.
  • Combine sugar and flour, then add the remaining 5 cups of vegetable broth and wine. Mix in the bay leaf, thyme, and black pepper. Bring to a boil and cook for 8 minutes, stirring constantly. Reduce the heat, partially cover, and simmer for 30 minutes.
  • Heat up the oven broiler.
  • After cooking, discard the bay leaf and add brandy for a rich flavor. Enhance the toast by rubbing it with garlic. Serve the soup in 4 ovenproof bowls, each topped with a piece of garlic toast. Finish by sprinkling with Parmesan cheese for a delicious touch.
  • Broil until cheese is gooey and bubbly.
