Marinate chicken in flavorful ginger, soy sauce, and rice wine overnight, then cook to perfection. Enjoy with rice or noodles.
Ingredients:
  • 1 (3 pound) whole chicken, cut into pieces
  • 1 tablespoon grated fresh ginger root
  • 1 clove garlic, crushed
  • 3 tablespoons white sugar
  • 0.66666668653488 cup soy sauce
  • 1 tablespoon sake
  • 0.25 cup mirin (Japanese sweet wine)
  • 2 tablespoons cooking oil
Instructions:
  • Wash and dry the chicken. Combine ginger, garlic, sugar, soy sauce, sake, and mirin in a glass dish. Add the chicken to marinate. Cover and refrigerate for several hours or overnight.
  • In a large heavy skillet over medium-high heat, heat oil until shimmering. Add chicken pieces skin-side down. Cook until golden brown on both sides. Discard excess grease, then pour in reserved marinade.
  • Simmer covered on low heat for 8 to 10 minutes, then uncover and continue cooking, shaking the skillet occasionally, until the marinade thickens into a rich sauce and the chicken is cooked through.
