Iconic New England cornbread with Greek yogurt for extra moistness and cornmeal for texture. Perfect pairing with chicken or chili.
Ingredients:
  • Butter (for the pan)
  • Flour (for the pan)
  • 3 large eggs
  • 1 cup canola oil
  • 2 cups plain Greek yogurt
  • 1/2 cup sugar
  • 2 cups yellow cornmeal, preferably stoneground
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Instructions:
  • Preheat the oven to 375F. Grease a 9x13-inch baking pan with butter, line the bottom with parchment paper, grease the paper, and dust the pan with flour, tapping out any excess.
  • For the batter, combine eggs, canola oil, and yogurt in a large bowl, mix until smooth. Add sugar, cornmeal, flour, baking powder, baking soda, and salt. Stir until well combined with no dry pockets left.
  • Bake the cornbread: Pour the batter into the pan and use a spatula to ensure a smooth top. Bake for 35 minutes until golden brown and firm in the middle. Cool on a rack for 10 minutes before serving.
