Make crispy, tender yogurt chicken for a simple yet delicious meal any night of the week.
Ingredients:
  • 0.25 cup butter
  • 4 skinless, boneless chicken breasts
  • 1 (6 ounce) container plain low-fat yogurt
  • 1 lemon, juiced
  • 1 cup dried bread crumbs, seasoned
  • 0.5 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and scatter four small pieces of butter into a 9x13-inch baking dish.
  • Blend yogurt in a small bowl until velvety. Incorporate lemon juice and mix well. (Tip: Ensure yogurt is smooth before adding lemon juice to prevent curdling.)
  • Combine bread crumbs, garlic powder, and salt in a shallow bowl. Coat each chicken breast in yogurt, then in bread crumb mixture, ensuring even coating. Place coated chicken in baking dish, top with remaining butter, and sprinkle with parsley.
  • Roast in the preheated oven until chicken is cooked through and juices run clear, approximately 1 hour. Ensure internal temperature reaches 165 degrees F (74 degrees C) when checked with an instant-read thermometer. Rest for 5 to 10 minutes before serving.
