Cheesecake bars made with Betty Crocker® cookie mix, Yoplait® yogurt, and fresh berries - a decadent dessert delight.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Oatmeal Cookie Mix
  • 1/2 cup butter or margarine, softened
  • 1 egg
  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup Gold Medal™ all-purpose flour
  • 2 eggs
  • 1 container (6 oz) Yoplait® Light Fat Free raspberry cheesecake yogurt
  • 2 cups fresh or frozen raspberries, thawed if frozen
Instructions:
  • Preheat the oven to 350 F and generously coat a 13x9 inch pan with cooking spray.
  • Combine cookie mix, melted butter, and 1 egg in a medium bowl until a stiff dough forms. Set aside 1/2 cup of the dough. Press the remaining dough into the bottom of the pan using floured fingers. Bake for 10 minutes.
  • In a large bowl, use an electric mixer to blend cream cheese, flour, eggs, and yogurt until smooth. Spread this mixture evenly over the partially baked base, then add raspberries on top. Finally, crumble the reserved oatmeal dough over the raspberries.
  • Bake until the top is lightly golden brown, approximately 30 to 35 minutes. Allow to cool for 10 minutes, then refrigerate for about 2 hours until chilled. Cut into 9 rows by 4 rows to make bars. If desired, top the bars with fresh raspberries for a lovely garnish. Remember to cover and refrigerate any leftovers.
