Recreate Cheesecake Factory's crispy avocado egg rolls with tamarind-cashew sauce at home using an air fryer, no deep frying needed.
Ingredients:
  • 1/2 cup raw cashews
  • 1/4 cup olive oil
  • 3 Tbsp. honey
  • 2 Tbsp. thinly sliced scallions (from 1 scallion)
  • 3 medium garlic cloves, crushed
  • 1 1/2 Tbsp. white balsamic vinegar
  • 2 tsp. tamarind purée (such as Sambar)
  • 2 tsp. tamari
  • 1/2 tsp. ground turmeric
  • 1 cup chopped fresh cilantro, divided
  • 1/4 cup tap water, divided
  • 3 Tbsp. fresh lime juice, divided (from 2 medium limes)
  • 1 1/4 tsp. kosher salt, divided
  • 3 small (7 oz. each) avocados, diced (about 3 cups)
  • 1/3 cup finely chopped red onion (from 1 small [5 oz.] onion)
  • 1/3 cup sun-dried tomatoes packed in oil, chopped
  • 10 square (6 1/2- x 6 1/2-in.) egg roll wrappers
Instructions:
  • Assemble all the ingredients.
  • Blend cashews, olive oil, honey, scallions, garlic, vinegar, tamarind purée, tamari, turmeric, 2/3 cup cilantro, 2 tablespoons water, 2 tablespoons lime juice, and 3/4 teaspoon salt in a blender until smooth with finely chopped cashews, around 30 seconds. Chill covered in a bowl until needed.
  • Combine ripe avocados, vibrant red onion, and flavorful sun-dried tomatoes with the remaining fresh cilantro, zesty lime juice, and a pinch of salt in a medium bowl until well mixed.
  • On a clean work surface, set aside 2 tablespoons of water in a small bowl. Position an egg roll wrapper with a corner pointing towards you. Spread approximately 3 tablespoons of the avocado mixture in a horizontal line at the center of the wrapper, making sure to leave a 2-inch space uncovered towards the side corners.
  • Moisten the outer edges of the egg roll wrapper with a touch of water. Fold the closest corner up and over about 1/2-inch of the avocado mixture, pressing lightly to seal. Fold the side corners over to create an envelope shape, then roll up into an egg roll shape, securing the last corner. Place it on a baking sheet and continue with the remaining wrappers and filling.
  • Preheat your air fryer to 390°F following the manufacturer's guidelines for about 12 minutes. Lightly coat the air fryer basket with cooking spray. Arrange the egg rolls in the basket, coating them generously with cooking spray. Cook in the air fryer, turning twice, until they are deep golden brown and crispy, approximately 12 minutes.
  • Place the rolls on a serving plate and enjoy with the tangy tamarind-cashew dipping sauce.
