Add colorful mixed vegetables to a flavorful beef and noodle soup for a quick and delicious dinner option. Ready in just 25 minutes!
Ingredients:
  • 1/2 lb. extra-lean ground beef
  • 3 1/2 cups water
  • 1 (14 1/2-oz.) can diced tomatoes with green chiles, undrained
  • 1 cup frozen mixed vegetables
  • 1 beef bouillon cube or 1 teaspoon beef-flavor instant bouillon
  • 1 (2.8-oz.) pkg. beef-flavor baked ramen noodle soup mix
  • 4 tablespoons low-fat sour cream, if desired
Instructions:
  • Cook the ground beef in a Dutch oven or large saucepan over medium-high heat until it's perfectly browned. Remember to drain the excess fat before continuing.
  • Combine water, tomatoes, vegetables, bouillon, and seasoning packet from the soup mix in a pot. Mix thoroughly and bring to a boil. Break up the ramen noodles and add them to the pot. Simmer for 3 to 5 minutes or until noodles are tender, stirring occasionally to separate them.
  • When ready to enjoy, pour the soup into bowls and drizzle 1 tablespoon of sour cream over each serving.
