Whip up a delicious chicken schnitzel in just 30 minutes with only 6 ingredients.
Ingredients:
  • 2 lemons
  • 110g breadcrumbs
  • 150g mayonnaise
  • 2 RSPCA Approved Chicken Breast Fillets, halved horizontally
  • 20.00 ml drained baby capers
  • Mixed salad leaves, to serve
Instructions:
  • Grate half of a lemon's rind finely and zest the other half. Mix the lemon rind and breadcrumbs in a large bowl. Cut the lemon into wedges.
  • Coat chicken in mayonnaise, then dip in breadcrumbs and press to coat evenly. Transfer to a baking tray.
  • Preheat a greased large frying pan over medium-high heat. Cook chicken for 3-4 minutes on each side until golden brown and fully cooked. Transfer the cooked chicken to a paper towel-lined plate.
  • Arrange the chicken on serving plates, generously sprinkle with fragrant lemon zest and flavorful capers, season to perfection, and serve alongside fresh salad leaves and tangy lemon wedges.
