Vegetarian casserole with broccoli, zucchini noodles (zoodles) for a tasty and fun texture in this simple veggie bake.
Ingredients:
  • 0.25 cup avocado oil
  • 0.5 cup butter
  • 3 cloves garlic, minced, or more to taste
  • 2 zucchini
  • 1 large head broccoli, broken into florets
  • 10 mushrooms, stemmed and sliced, or more to taste
  • 6 mini bell peppers, sliced
  • 15 leaves basil, or to taste, divided
  • 1 large tomato, diced
  • 0.25 cup tomato sauce
  • 0.5 teaspoon oregano, or to taste
  • 10 slices fresh mozzarella cheese, or to taste
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C and grease a 9x13-inch baking pan with avocado oil.
  • In a skillet set over medium heat, melt the butter for about 2 minutes. Add the garlic and stir.
  • Spiralize zucchini into noodle shapes.
  • In a large bowl, mix zucchini noodles, broccoli, mushrooms, bell peppers, and half of the basil leaves. Add the butter mixture and stir until fully combined.
  • Spread the vegetable mixture into the baking pan. Add a layer of tomatoes on top. Drizzle with tomato sauce, sprinkle with oregano, salt, and pepper. Place the remaining basil leaves on top, followed by a layer of mozzarella cheese. Cover with aluminum foil before baking.
  • Bake until the cheese is melted, about 20-30 minutes. Remove the foil using oven mitts. Bake until the vegetables are tender and the cheese is bubbly, another 15-30 minutes.
