Cheesy zucchini with garden fresh tomatoes, bell peppers, and Italian seasoning - a burst of flavor as a side or veggie main.
Ingredients:
  • 2 tablespoons unsalted butter
  • 1 large zucchini, chopped
  • 1 large white onion, chopped
  • 4 tomatoes, chopped
  • 1 large green bell pepper, chopped
  • dried Italian seasoning to taste
  • 1 (8 ounce) package shredded mozzarella cheese
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and gently grease a medium casserole dish.
  • In a skillet over medium heat, melt the butter until sizzling. Add zucchini and onion, sautéing until the onion turns golden brown, about 5-8 minutes. Transfer the flavorful mixture to the casserole dish.
  • Combine the tomatoes, green pepper, and Italian seasoning in the dish, then sprinkle with cheese on top.
  • Bake in the hot oven until the cheese is melted and bubbly, around 25 minutes.
