Ingredients:
  • 500g zucchini
  • 150g haloumi, grated
  • 5 green onions, thinly sliced
  • 82.50 ml chopped fresh flat-leaf parsley leaves
  • 40.00 ml chopped fresh basil leaves
  • Tzatziki dip, to serve
  • 99.00 gm self-raising flour
  • 128.75 gm milk
Instructions:
  • For the basic batter, sift flour into a bowl and make a well in the center. In a separate jug, whisk together milk and eggs, then pour the mixture into the flour. Whisk everything together until smooth.
  • Squeeze excess moisture from zucchini using your hands, then mix it with haloumi, onion, parsley, and basil into the batter.
  • In a frying pan over medium heat, heat 1 tablespoon of oil. Scoop 1/4 cup of the mixture for each fritter and cook 4 fritters for 3 minutes per side until golden and cooked through. Repeat until you have made 12 fritters. Serve alongside tzatziki and lemon wedges.
