Zucchini and ham 'rainbow' slice

Delightful zucchini slice with veggies, ham, and cheese - a family favorite lunch.
Ingredients:
  • 3 medium zucchini, grated
  • 6 eggs
  • 200ml tub Creme Fraiche, plus extra to serve
  • 75 g (1/2 cup) self-raising flour
  • 150g grated pizza cheese
  • 1 carrot, grated
  • 200g leftover ham off the bone, chopped
  • 2 shallots, chopped
Instructions:
  • Preheat your oven to 180C (160C fan-forced) while you generously grease a 20 x 30 x 4 cm baking dish or tin. Line the base with non-stick baking paper, making sure it extends over two sides for easy removal later.
  • Press out the excess moisture from the zucchini. Combine eggs and crème fraiche in a large bowl. Mix in flour, half of the cheese, carrot, and zucchini until well combined. Gently fold in the ham and shallots, then season with salt and pepper.
  • Transfer the mixture into the prepared dish. Sprinkle the remaining cheese on top. Bake for 35-40 minutes until golden and set. Serve warm or cold, cut into pieces, and accompany with extra Creme Fraiche if desired.
