Delicious Zucchini Plum Bread - perfect for a summer breakfast everyone will love!
Ingredients:
  • 2 cups shredded zucchini
  • 1 cup vegetable oil
  • 1 cup packed brown sugar
  • 3 eggs
  • 1 cup whole wheat flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking powder
  • 3 cups chopped plums
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), and prepare 2 bread pans by lining them with parchment paper or spraying with cooking spray.
  • In a bowl, vigorously whisk zucchini, oil, 1 cup white sugar, brown sugar, eggs, and vanilla extract until thoroughly combined. In another bowl, mix all-purpose flour, whole wheat flour, baking soda, salt, 1 teaspoon cinnamon, and baking powder. Slowly incorporate the flour mixture into the zucchini mixture until just combined, then gently fold in the plums. Pour batter into the prepared pans.
  • Combine 1 tablespoon white sugar and 1 teaspoon cinnamon in a small bowl, then evenly sprinkle over the batter.
  • Place the pans in the preheated oven and bake until a toothpick inserted in the center comes out clean, approximately 1 hour. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
