BBQ plum chicken wings with brown rice salad

Tangy plum chicken wings: perfect party appetizer or pair with rice salad for a wholesome family dinner.
Ingredients:
  • 1kg BBQ plum marinated chicken wing pieces
  • 400.00 gm brown rice
  • 625ml water
  • 1 chicken style stock cube, crumbled
  • 1 zucchini, diced
  • 420g can corn kernels, drained and rinsed
  • 2 shallots, finely sliced
  • 2 tsp grated ginger, grated
  • 42.00 gm lemon juice
  • 36.80 gm oil
  • 1 bunch fresh coriander, leaves picked
Instructions:
  • Preheat your oven to a toasty 200°C. Arrange the succulent chicken wing pieces in a baking dish and bake until beautifully crisp, which should take about 50 minutes.
  • Rinse the rice until the water is clear. Combine the rice, water, and stock cube in a saucepan. Bring to a boil, then simmer on low for 25 minutes until the liquid is absorbed. Let the rice sit, covered, for an additional 10 minutes to steam perfectly. Resist the temptation to peek!
  • Combine the zucchini, corn kernels, shallots, and ginger in the pan. Let it steam for a few minutes. Add lemon juice, oil, and coriander. Season with salt and pepper. Serve the rice salad with the chicken wing pieces.
