Zucchini ribbons sautéed in garlic-infused olive oil and butter, topped with goat cheese and fresh basil.
Ingredients:
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 0.25 cup finely minced shallot
  • 1 clove garlic, finely minced, or to taste
  • 0.5 teaspoon crushed red pepper flakes, or to taste
  • 0.5 cup chicken broth
  • 2 large zucchini, sliced into long ribbons using a vegetable peeler, discarding the seedy core
  • 0.25 cup thinly sliced basil leaves
  • 2.5 ounces goat cheese, crumbled
  • salt and pepper to taste
Instructions:
  • In a large skillet over medium heat, melt the butter with olive oil. Sauté the shallot for about 5 minutes until softened. Add garlic and red pepper flakes, cook for an additional 3 minutes until fragrant. Pour in chicken broth and zucchini ribbons. Simmer until zucchini is tender, about 4 minutes. Remove from heat, season with salt and pepper, then garnish with basil leaves and crumbled goat cheese before serving.
