Zucchini slice muffins

Transform classic zucchini slice into delightful mid-morning muffins.
Ingredients:
  • 2 zucchini, grated (see notes)
  • 1 green onion, finely chopped
  • 50g leg ham, chopped
  • 125.00 ml grated tasty cheese
  • 300.00 gm self-raising flour
  • 3 eggs
  • 56.88 gm extra virgin olive oil
  • 193.13 gm milk
  • 120.00 gm smooth ricotta
  • 40.00 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • Preheat your oven to 190°C (170°C fan-forced) and generously grease a 12-hole muffin pan with a 1/3-cup capacity.
  • Combine 3/4 of the zucchini with onion, ham, cheese, and flour in a large bowl. Mix well until ingredients are fully incorporated.
  • Whisk together eggs, oil, milk, and ricotta. Pour mixture into zucchini mixture, season, add parsley, and mix well. Transfer to prepared pan and top with remaining zucchini.
  • Bake for 15 to 20 minutes until golden and firm to the touch. Let it rest in the pan for 5 minutes, then transfer to a wire rack to cool. Enjoy warm or cold (refer to notes).
