'But Why Is The Rum Gone?' Grilled Shrimp

Marinate shrimp in zesty lime, mint, shallot, and rum before grilling.
Ingredients:
  • 1 shallot, minced
  • 0.25 cup chopped fresh mint leaves
  • 0.33333334326744 cup white rum
  • 0.25 cup fresh lime juice
  • 1 teaspoon freshly grated lime zest, or more to taste
  • ground black pepper to taste
  • 1.5 pounds peeled and deveined medium shrimp, tail-on
  • 2 tablespoons fresh lime juice
Instructions:
  • In a bowl, crush mint leaves, sugar, and shallot together with a spoon. Add rum, 1/4 cup lime juice, and lime zest to make a flavorful marinade. Season with salt and black pepper to taste.
  • Transfer the marinade to a resealable plastic bag. Add the shrimp, ensuring they are coated well, remove any excess air, then seal the bag. Allow the shrimp to marinate at room temperature for 15 to 20 minutes.
  • Heat up your outdoor grill until it reaches a nice medium-high temperature and brush the grate lightly with oil.
  • Skewer shrimp onto 6 bamboo or metal skewers in a uniform manner. Discard remaining marinade.
  • Grill the skewers until golden on all sides and the meat is cooked through, about 5 minutes, then finish with a drizzle of 2 tablespoons of fresh lime juice before serving.
