London pea and ham soup inspired by the city's foggy charm.
Ingredients:
  • 300g split peas
  • 1 onion, 1 carrot & 1 celery stalk, chopped
  • 2 bay leaf
  • 1 ham hock (see note)
  • 60g pea
  • Cream, to serve
  • Crusty bread, to serve
Instructions:
  • In a pot, combine split peas, onion, carrot, celery, bay leaf, and ham hock. Cover with water, bring to a boil, then simmer over low heat for 1½ hours, stirring occasionally, until peas soften and hock is tender. Remove bay leaf. Let soup and hock cool slightly before removing the hock.
  • Begin by separating the ham from the hock and chopping it, being sure to discard the skin and bone. Blend the soup in batches and then add the chopped ham, warming the mixture over low heat. Season the soup to taste. Serve by ladling the soup into bowls and garnishing with peas and a drizzle of cream. Enjoy with a side of bread.
