Delicious lentil and mozzarella veggie burgers with flavorful seasonings - a budget-friendly twist on a classic sandwich!
Ingredients:
  • water to cover
  • 1 cup dried lentils
  • 0.5 cup wheat germ
  • 1 small onion, finely diced
  • 0.5 cup finely chopped green bell pepper
  • 0.25 cup shredded mozzarella cheese
  • 1 egg, beaten
  • 1 tablespoon finely chopped green chile pepper
  • salt and ground black pepper to taste
  • 0.25 cup vegetable oil, divided
Instructions:
  • Fill a pot with enough water to cover the lentils and wheat germ. Bring it to a boil. Add lentils and wheat germ, then simmer until lentils are tender, adding more water if needed, for 20 to 25 minutes. Remove the pot from the heat and let it cool slightly. Mash the lentil mixture until thick and lumpy.
  • Transfer the mashed lentil mixture into a bowl. Combine onion, green bell pepper, mozzarella cheese, egg, green chile pepper, garlic, salt, and pepper with the lentil mixture, ensuring everything is well mixed. Shape the mixture into 8 patties.
  • In a large skillet, heat 2 tablespoons of vegetable oil over high heat. Reduce heat to medium-high and cook 4 patties until golden brown on each side, about 3 minutes. Repeat with remaining oil and patties.
