Kid-friendly Mexican bean burgers for a fiber boost.
Ingredients:
  • 18.20 gm olive oil
  • 300g can corn kernels
  • 300g beef mince
  • 420g can Beanz Creationz Fiery Mexican Style Beanz
  • 1/2 tsp Mexican chilli powder
  • 1 avocado
  • 60g Mexican-flavoured vintage cheddar
  • 2 tomatoes
  • 4 brioche burger buns
  • 1 lime
  • Fresh coriander leaves, to serve
Instructions:
  • Heat the oil in a large frying pan over high heat. As the pan heats up, drain the corn.
  • Heat the pan until it's sizzling hot, then add the beef and cook for 3 minutes, stirring with a wooden spoon to break up any clumps until it's nicely browned. Add the corn, beans, and chili powder, then mix everything together. Lower the heat to low and simmer for 5 minutes until slightly thickened.
  • While you wait, cut the avocado in half and slice the flesh. Slice the cheese and tomatoes thinly.
  • Split the buns in half. Halve the lime. Squeeze one lime half over the beef mixture, season, and mix well. Spoon the beef mixture onto the bottom buns. Add avocado, cheese, tomato, and coriander on top. Serve with the remaining lime half cut into wedges.
