Quick and creamy carbonara pasta with garlic, mushrooms, eggs, and Parmesan cheese for a flavorful delight!
Ingredients:
  • 1 (16 ounce) package spaghetti
  • 0.5 pound sliced fresh mushrooms
  • 2 cloves garlic
  • 0.5 cup freshly grated Parmesan cheese divided
Instructions:
  • Bring a generously salted pot of water to a vigorous boil. Add spaghetti and cook, stirring occasionally, until perfectly al dente, about 12 minutes. Drain well.
  • Saute mushrooms in a dry skillet over medium heat until golden brown and releasing moisture, for 3 to 5 minutes. Add oil and garlic, and cook until garlic softens, about 3 minutes.
  • In a bowl, whisk together the eggs and half of the Parmesan cheese until combined. Stir this mixture into the cooked mushrooms until well incorporated.
  • Plate the spaghetti and generously ladle the rich mushroom sauce over it, finishing with a sprinkle of the remaining Parmesan cheese on top.
