Whip up quick and easy fried rice in no time, no wok necessary.
Ingredients:
  • 2 x 250g packets microwave coconut, chilli and lemongrass basmati rice
  • 200g sliced leg ham, torn
  • 1/2 pineapple, peeled, roughly chopped into 2cm pieces
  • 260g jar chargrilled red capsicum, drained, roughly chopped
  • 1/2 small red onion, thinly sliced
  • 125g snow peas, shredded
  • 187.50 ml fresh coriander sprigs
  • 44.00 gm sweet chilli sauce
  • 31.50 gm lime juice, plus extra lime wedges to serve
  • 3 tsp kecap manis
  • 2 tsp sesame oil
  • 1 garlic clove, crushed
  • Sesame seeds, to serve
Instructions:
  • Prepare fluffy rice effortlessly by microwaving it as per the instructions on the packet.
  • Combine warm rice, ham, pineapple, capsicum, onion, snow peas, and half of the coriander in a bowl, tossing gently to mix.
  • Combine sweet chilli sauce, lime juice, kecap manis, sesame oil, and garlic in a small bowl. Mix until fully blended. Pour half of the sauce mixture into the rice mixture and toss to combine.
  • Portion out the rice mixture into individual serving bowls. Garnish with sesame seeds, fresh coriander, and a drizzle of the remaining sauce. Accompany with lime wedges on the side.
