Try our Easy Baby Zucchini Fritters - just 4 ingredients for a crispy, flavorful snack anytime!
Ingredients:
  • 500g zucchini
  • 150g (1 cup) self-raising flour
  • 20.00 ml Vegetable Stock Powder
  • 2 eggs, lightly beaten
  • Vegetable oil, for shallow-frying
  • Tomato relish, to serve
Instructions:
  • Remove excess moisture from the zucchini and place it in a large bowl. Mix in flour and stock powder until coated. Add the egg and season generously, then stir thoroughly to combine.
  • Pour enough oil into a large frying pan to reach 5mm up the side. Warm over medium heat. Cook level tablespoons of mixture for 2-3 minutes per side until golden and fully cooked, adding more oil as necessary. Place fritters on paper towel to drain excess oil.
  • Enjoy the fritters while warm, accompanied by a side of tomato relish.
