Make flavorful dukkah lamb cutlets with broccoli rice, roast tomatoes, and tzatziki in just 5 ingredients.
Ingredients:
  • 200g vine-ripened cherry tomatoes
  • 1 head broccoli, florets and stems coarsely chopped
  • 12 Lamb Cutlets
  • 40.00 ml pistachio dukkah
  • 200g tzatziki dip
Instructions:
  • Preheat your oven to 200°C. Line a baking tray with parchment paper, then arrange the tomatoes on it. Season the tomatoes to your liking and bake for 15-20 minutes until they start to split.
  • Place the broccoli in a food processor and pulse until finely chopped.
  • Preheat a roomy non-stick skillet over high heat. Season both sides of the lamb with half of the aromatic dukkah spice blend.
  • Sear the steak for 2 minutes on each side for a medium doneness or to your preference. Place it on a plate and tent with foil. Let it rest for 5 minutes.
  • Once the lamb is resting, introduce the broccoli into the pan. Sauté while tossing for 3-5 minutes until vibrant green and fully cooked.
  • Present the lamb and broccoli rice accompanied by the tomatoes, tzatziki, and the rest of the dukkah for a satisfying meal.
