Irresistible twist on classic carrot cake with surprising ingredients. Even coconut-haters can't resist! Taste it to believe it.
Ingredients:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon allspice
  • 4 eggs
  • 2 cups white sugar
  • 1.25 cups vegetable oil
  • 2 cups grated carrots
  • 1 (20 ounce) can crushed pineapple, drained
  • 0.5 cup sweetened flaked coconut
  • 1 cup chopped walnuts
  • 1 cup raisins
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) while you generously coat a 10x15x2 inch baking dish or 10 inch Bundt pan with cooking spray.
  • Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium bowl. In a separate large bowl, hand mix eggs, sugar, and vanilla until combined. Stir in oil until mixture resembles pudding. Gradually incorporate dry ingredients into wet mixture before folding in carrots, pineapple, coconut, walnuts, and raisins. Pour batter into pan and spread evenly.
  • Bake in the preheated oven for 55 to 60 minutes or until a knife inserted into the cake comes out clean.
