"Recreate fair-style corn dogs with a decadent buttermilk corn batter."
Ingredients:
  • 1 quart oil for deep frying
  • 0.66666668653488 cup yellow cornmeal
  • 0.25 cup white sugar
  • 1.5 teaspoons baking powder
  • 2 tablespoons bacon drippings
  • 1 egg, beaten
  • 1.25 cups buttermilk
  • 0.5 teaspoon baking soda
  • 2 pounds hot dogs
  • wooden sticks
Instructions:
  • Preheat oil in a deep fryer to 365°F (185°C).
  • Combine flour, cornmeal, sugar, baking powder, and salt in a large bowl. Stir in melted bacon drippings. Create a well in the center, then add the egg, buttermilk, and baking soda. Mix until smooth and thoroughly blended.
  • Dry the hot dogs with paper towels to help the batter adhere, then insert wooden sticks. Dip each hot dog in the batter, shaking off any excess. Deep fry a few at a time in hot oil until golden brown. Drain on paper towels or serve on paper plates.
