Elevate classic green bean casserole with fresh green beans, mushrooms, and a creamy homemade sauce.
Ingredients:
  • 2 (12 ounce) packages frozen French cut green beans
  • 8 ounces crimini mushrooms, quartered
  • 3 tablespoons butter
  • 1 small onion, halved and thinly sliced
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons all-purpose flour
  • 0.5 teaspoon lemon zest
  • 0.5 teaspoon salt
  • 1 pinch ground black pepper
  • 0.5 cup milk
  • 1 cup sour cream
  • 0.5 cup shredded Cheddar cheese
  • 1 (2.8 ounce) can French-fried onions
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • In a saucepan, add green beans and enough water to reach 1/2 inch depth. Bring to a boil, cover, and steam for about 5 minutes until beans are tender yet vibrant green. Drain before serving.
  • Toss mushrooms and drained beans together in a bowl until well combined.
  • In a large skillet over medium heat, melt butter until sizzling. Add onion and parsley, sauté until onion is tender, about 5-7 minutes. Whisk in flour until smooth, then fold in lemon zest, salt, and pepper. Slowly pour in milk, stirring constantly to avoid any lumps.
  • Combine the sour cream with the sauce, then warm over medium heat until it starts to bubble. Add the green beans and mushrooms, stirring well to coat.
  • Take off the heat and mix gently with half of the Cheddar cheese and half of the French-fried onions. Transfer to a 1 1/2-quart casserole dish; sprinkle the remaining Cheddar and onions on top.
  • Bake until the Cheddar cheese is gooey and bubbly, approximately 15 minutes in the preheated oven.
