Decadent stuffed calamari baked in creamy sauce, served over linguine. A top contender for best entree ever!
Ingredients:
  • 3 cups milk
  • 12 calamari tubes
  • 2 green onions, finely chopped
  • 8 cloves garlic, minced, divided
  • 0.5 pound chopped cooked shrimp meat
  • 0.5 pound cooked crabmeat, diced
  • 1 tablespoon lemon juice
  • 0.75 cup butter
  • 12 ounces cream cheese, cut into cubes
  • 2 cloves garlic, minced
  • 10 ounces freshly grated Parmesan cheese
  • 1 pinch ground black pepper
  • 0.75 cup freshly grated Romano cheese
  • 1 (8 ounce) package linguine pasta
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), then gently rinse the calamari tubes and pat them dry.
  • Combine onions, 6 cloves garlic, shrimp, crabmeat, and lemon juice in a large bowl. Stuff each squid tube with the mixture, securing the ends with toothpicks. Place the filled squid tubes in a 9x13-inch baking dish in a single layer.
  • In a saucepan over medium heat, melt butter. Add cream cheese and 2 cloves of garlic, stirring until cream cheese melts. Slowly whisk in milk, cooking until heated through. Remove from heat, stir in Parmesan cheese and pepper. Pour over calamari tubes in baking dish. Sprinkle 2 tablespoons of Romano cheese on each piece.
  • Bake the calamari uncovered until the cheese is golden and the sauce is bubbling. In the meantime, boil a large pot of lightly salted water. Cook linguine pasta until al dente, approximately 8 minutes. Drain the pasta and serve with the stuffed calamari and sauce on top.
