Garlic-infused aioli with bold flavors, ideal for dipping crispy chips.
Ingredients:
  • ½ small clove garlic peeled
  • sea salt
  • freshly ground black pepper
  • 1 large free-range egg yolk
  • 1 teaspoon Dijon mustard
  • 285 ml extra virgin olive oil
  • 285 ml olive oil
  • lemon juice to taste
Instructions:
  • Crush the garlic with 1 teaspoon of salt using a pestle and mortar, or the end of a rolling pin in a metal bowl. Combine egg yolk and mustard in a bowl; whisk together. Gradually add oils while whisking. Once a quarter of the oil is blended, increase the amount added. Once the mixture thickens, stir in lemon juice. Add garlic and other desired flavors. Season with salt, pepper, and lemon juice to taste. Lemon or basil-flavored aioli pairs well with salads, fish, seafood soups, roasted fish, chicken, pork, and salmon.
