Air Fryer Sweet Milk Dessert: Crispy outside, creamy inside. Inspired by global fried milk treats. Finished with cinnamon sugar for a decadent treat.
Ingredients:
  • 1.2L milk
  • 2 cinnamon sticks
  • 2 strips lemon rind
  • 4 eggs
  • 2 egg yolks
  • 215g (1 cup) caster sugar
  • 140g (1 cup) cornflour
  • 8.80 gm vanilla extract
  • 120g (3/4 cup) plain flour
  • Cinnamon sugar, to sprinkle
Instructions:
  • Prepare a 20cm x 30cm lamington pan by greasing it and lining it with baking paper.
  • In a medium saucepan, combine milk, cinnamon, and lemon rind, then heat over medium heat until it simmers.
  • In a large bowl, vigorously whisk together eggs, yolks, caster sugar, cornflour, and vanilla until fully blended. Pour the milk mixture over the egg mixture, whisk thoroughly until well combined. Remove and discard cinnamon sticks and rind before proceeding.
  • Pour the milk mixture back into a fresh medium saucepan. Continuously stir over medium-low heat for about 5 minutes until the mixture bubbles up and becomes thickened.
  • Pour the velvety milk mixture into the pan, ensuring a sleek top. Let it cool completely, then refrigerate for 3 hours until perfectly set.
  • Transfer the milk mixture onto a chopping board, then cut it into 3.5cm squares. Coat each square in flour, making sure to shake off any excess.
  • Lightly coat the basket of an air fryer with oil. Place milk squares in the basket and lightly spray with oil. Air fry at 200C for 10 minutes or until golden. Repeat the process with the remaining milk squares.
  • Generously dust milk squares with a fragrant mix of cinnamon sugar before presenting them.
