Air Fryer Blueberry Chimichangas

Blueberry and cream cheese-filled air-fried chimichangas - a delectable treat!
Ingredients:
  • 0.5 (8 ounce) package Neufchatel cheese, softened
  • 2 tablespoons sour cream
  • 1.5 tablespoons white sugar
  • 1 (6 ounce) container blueberries
  • 5 (7 inch) flour tortillas
  • avocado oil cooking spray
  • 2.5 tablespoons white sugar
  • 0.5 tablespoon ground cinnamon
Instructions:
  • In a bowl, blend Neufchatel cheese, sour cream, sugar, and vanilla extract with an electric hand mixer. Gently incorporate blueberries.
  • Warm tortillas in a skillet or on a gas stove until soft. Spoon 1/4 cup of blueberry mixture down the center of each tortilla. Fold ends over the filling and roll into burritos. Lightly spray with avocado oil and air fry.
  • Air fry chimichangas at 400 degrees F (200 degrees C) until golden brown, about 4-6 minutes. Flip, lightly coat with cooking spray, and air fry for an additional 1-2 minutes until golden brown. Allow to cool briefly before serving.
  • Combine sugar and cinnamon in a shallow bowl. Coat each chimichanga with avocado oil and then roll in cinnamon sugar mixture.
