Air fryer cheesy corn 'ribs' recipe

Mexican seasoned parmesan corn 'ribs' air fried to crispy perfection. Served with zesty lime sauce for a versatile and flavorful dish.
Ingredients:
  • 3 corncobs
  • 50g salted butter, at room temperature
  • 45g pkt Mexican seasoning
  • 130g (½ cup) Greek yogurt
  • 125g (½ cup) sour cream
  • 1 lime, rind finely grated, juiced, plus extra wedges, to serve
  • Finely grated parmesan, to serve
Instructions:
  • 1. Arrange the corncobs in a spacious microwave-safe dish and cover them with a moist paper towel. Microwave on High for 8 minutes or until they are tender. Slice the corncobs lengthwise using a sharp knife, then cut each half again to form 4 long 'ribs'.
  • Set aside 1 tbsp of Mexican seasoning. Mix butter with the remaining seasoning in a bowl. Coat corn ribs with the seasoned butter and transfer to the air fryer basket. Air fry at 180°C for 10-12 minutes until crispy and charred.
  • Prepare the lime sauce by mixing together yogurt, sour cream, reserved seasoning, lime rind, and lime juice in a bowl.
  • Place the corn ribs on a stylish serving plate, generously drizzle them with zesty lime sauce, sprinkle with savory parmesan, and accompany with additional lime wedges for a burst of flavor.
