Air fryer chicken rissoles recipe

Delicious air fryer chicken rissoles with panko, zucchini, and mince. Perfect for dinner with salad or a quick lunch sandwich the next day.
Ingredients:
  • 500g Chicken Mince
  • 25g (1/2 cup) panko breadcrumbs
  • 40g (1/2 cup) finely grated parmesan
  • 3 green shallots, thinly sliced
  • 1 zucchini, coarsely grated
  • 21.00 gm lemon juice
  • 23.40 gm Dijon mustard
  • 28.60 gm honey
Instructions:
  • In a large bowl, mix together the mince, breadcrumbs, parmesan, shallot, garlic, and egg. Squeeze the excess liquid from the zucchini, add it to the bowl, season well, and mix until fully combined.
  • Form 1/4 cup portions of the mixture into 10 balls. Place on a lightly oiled tray and gently flatten into 7cm rounds. Chill in the fridge for 30 minutes.
  • Lightly coat the rissoles and air fryer basket with oil. Air fry at 180°C for 10 minutes or until golden and fully cooked (refer to note).
  • Combine oil, juice, mustard, and honey in a small bowl and whisk until fully mixed.
  • Drizzle the dressing over the rissoles before serving.
