Air Fryer Chicken Fajita Taquitos

Marinate chicken for 2 hours for flavorful air-fried fajita taquitos. Delicious results await!
Ingredients:
  • 2 (4 ounce) boneless, skinless chicken breasts, cut into strips
  • 1.25 cups mojo criollo marinade
  • 1 pound corn tortillas
  • 1 (14 ounce) package fire-roasted peppers and onion blend (such as Trader Joe's®), thawed
  • 1 cup shredded Mexican cheese blend
  • cooking spray
Instructions:
  • In a sealable container, coat chicken strips with marinade. Seal and let marinate for 2 hours.
  • Strain off marinade and heat a skillet over medium-high heat. Sear chicken strips until golden, about 6 to 7 minutes. Toss in thawed peppers and onions and cook for an additional 2 to 3 minutes.
  • Move the chicken strips onto a cutting board and finely chop them. Return the chopped chicken back to the peppers and onions, then mix everything together thoroughly.
  • Preheat your air fryer to 370 degrees F (187 degrees C) for 5 minutes.
  • Place tortillas in a tortilla bag and microwave 5 at a time for 30 seconds.
  • *Lightly coat each side of warmed tortillas with a touch of oil and place them on a cutting board. Add 1 to 2 tablespoons of chicken filling on top, sprinkle with 1 tablespoon of cheese blend, and roll the taquitos tightly.*
  • Arrange the taquitos with the seam side down in the air fryer basket. Air fry at the current temperature for 5 minutes. Then, raise the temperature to 400°F (200°C) and air fry for an additional 5 minutes.
