Crispy air fryer fingerling potatoes with zesty dipping sauce - perfect as a quick side dish or delicious appetizer.
Ingredients:
  • 12 ounces fingerling potatoes, halved lengthwise
  • 0.25 teaspoon paprika
  • 0.33333334326744 cup reduced-fat sour cream
  • 2 tablespoons mayonnaise
  • 2 tablespoons finely grated Parmesan cheese
  • 1.5 tablespoons ranch dressing mix (such as Hidden Valley Ranch®)
  • 1 tablespoon white vinegar
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Preheat the air fryer to 390°F (200°C) for 5 minutes.
  • In a bowl, toss potatoes with olive oil, garlic powder, paprika, salt, and pepper until fully coated. Transfer the seasoned potatoes to the air fryer basket.
  • Air fry the potatoes in the preheated air fryer, giving the basket a shake halfway through, until they are perfectly cooked and crispy, for 15 to 17 minutes.
  • Combine sour cream, mayonnaise, Parmesan cheese, ranch dressing mix, and vinegar in a small bowl as the potatoes cook.
  • Transfer the cooked potatoes to a plate, sprinkle with fresh parsley, and serve immediately alongside your favorite dipping sauce.
