Crispy air-fried okra, a guilt-free vegetarian side dish, made effortlessly without the mess of deep frying.
Ingredients:
  • 1 large egg
  • 0.5 pound okra pods, cut into 1/2-inch slices
  • 1 cup cornmeal
  • 0.25 cup all-purpose flour
  • salt to taste
Instructions:
  • In a shallow dish, whisk the egg and then fold in the sliced okra.
  • In a large resealable plastic bag, mix cornmeal and flour. Add 5 slices of okra to the bag, seal, and shake until coated. Transfer the breaded okra to a plate. Repeat with the remaining okra slices.
  • Preheat the air fryer to 400°F (200°C). Add half of the breaded okra slices to the basket, spray with cooking spray, and cook for 4 minutes. Shake the basket, spray the okra again, and cook for another 4 minutes. Give it one final shake and cook for 2 more minutes. Remove the okra from the basket and season with salt to taste.
  • Continue the process with the rest of the okra slices.
