Make a delicious Spanish tortilla in the air fryer for a low-mess, low-oil vegetarian twist.
Ingredients:
  • 1 large potato, peeled and cut into 1-inch cubes
  • 1 tablespoon extra-virgin olive oil
  • 0.125 cup leek, sliced into 1/4-inch pieces
  • 5 eggs
  • 0.25 cup grated Pecorino Romano cheese
  • salt and ground black pepper to taste
  • 0.125 cup chopped fresh flat-leaf parsley
Instructions:
  • Wash the potato cubes and let them soak in a bowl of cold water for 10 minutes.
  • Preheat your air fryer to 325°F (160°C).
  • Pat dry the drained potatoes before tossing them in a bowl with olive oil and transferring them into the air fryer basket.
  • After cooking for 18 minutes, increase heat to 350 degrees F (180 degrees C). Shake the basket, then add leeks and shake again. Continue cooking until leeks have softened, around 3 minutes.
  • Whisk together eggs, Pecorino Romano cheese, salt, and pepper in a bowl. Pour the mixture into a 6-inch nonstick cake pan. Add cooked potatoes and leek, then place the cake pan into the air fryer basket. Cook until tortilla is golden brown on top and no longer jiggles in the middle, for about 15 minutes.
  • Take out from the air fryer and let it cool for 5 minutes before serving. Garnish with fresh Italian parsley.
