Spicy, tangy and crispy onion rings made healthier in the air fryer with adobo, chili, and lime seasonings.
Ingredients:
  • 2 large sweet onions, sliced 1/2 inch thick
  • 0.67 cup buttermilk
  • 1 egg
  • 1 teaspoon RedHot Chile and Lime Seasoning Blend (such as Frank's®)
  • 0.5 teaspoon adobo all-purpose seasoning (such as Goya®)
  • 2 cups panko bread crumbs
  • 1 teaspoon adobo all-purpose seasoning (such as Goya®)
  • 0.5 teaspoon RedHot Chile and Lime Seasoning Blend (such as Frank's®)
  • olive oil cooking spray
  • 1 teaspoon kosher salt, or to taste
Instructions:
  • Combine buttermilk, egg, flour, chile and lime seasoning, and adobo seasoning in a shallow bowl, whisk until smooth. Cover and chill in the refrigerator for 30 minutes.
  • Mix panko, adobo seasoning, and chile and lime seasoning in a shallow dish. Take the batter out of the fridge. Dip onion rings in the batter first, then coat them in the bread crumb mixture, shaking off excess crumbs. Lightly spray both sides of the onion rings with cooking spray.
  • Preheat the air fryer to 340 degrees F (170 degrees C) and prepare the basket by lining it with parchment paper or giving it a light oil spray.
  • Arrange the breaded onion rings in the fryer basket, ensuring they are evenly spaced with a 1/2-inch gap between each slice.
  • Achieve a crispy, golden brown exterior by cooking for 10 to 12 minutes, flipping halfway through. You may need to cook in batches, as cooking time can differ based on the size and brand of your air fryer.
  • Transfer the cooked food from the air fryer to a baking sheet, sprinkle with kosher salt, and keep warm in a 250°F (120°C) oven.
