Whip up a delicious spinach and mushroom frittata in the air fryer for a speedy and satisfying solo breakfast.
Ingredients:
  • nonstick cooking spray
  • 2 large eggs
  • 1.5 tablespoons heavy whipping cream
  • 1 cup coarsely chopped spinach leaves
  • 0.5 cup diced mushrooms
  • 0.25 cup shredded sharp Cheddar cheese
  • salt and freshly ground black pepper to taste
Instructions:
  • Preheat the air fryer to 400 degrees F (200 degrees C) and generously coat a 4 1/2-inch ramekin with nonstick spray.
  • In a bowl, beat eggs and cream until smooth. Mix in spinach, mushrooms, Cheddar cheese, salt, and pepper until fully incorporated. Transfer mixture to the ramekin and seal with foil.
  • Air-fry for 12 minutes. Remove foil and continue air-frying until the top is golden brown and a toothpick inserted in the center comes out clean, about 4-8 minutes more.
