Airfryer roast pork loin with crackling recipe

Try the Russell Hobbs Crisp 'N Bake Toaster Oven for perfect crackling.
Ingredients:
  • 1 kg pork loin
  • 2 tsp white vinegar
  • 18.20 gm olive oil (plus more for rind)
  • 20.00 ml thyme, finely chopped
  • 1 garlic clove, peeled and roughly chopped
  • 4.80 gm salt flakes
  • 1 teaspooons ground fennel seeds
  • 1/2 tsp ground black pepper
Instructions:
  • Dry the pork thoroughly with paper towel. Score the skin with a small sharp knife in long parallel cuts about 5mm apart without piercing the meat. Massage the skin with vinegar and refrigerate uncovered for 1 hour or ideally overnight for optimal flavor development.
  • Mix the oil, herbs, garlic, 1 teaspoon of salt, fennel, and pepper. Spread the mixture on the meat, avoiding the skin. Place the pork on a large piece of foil with the skin facing up. Brush the skin with oil and sprinkle the remaining salt. Wrap the foil around the meat, leaving the skin exposed.
  • Place the pork on the air-fryer tray in the Crisp 'N Bake Toaster Oven on the middle shelf. Position the drip tray on the bottom shelf. Air-fry for 30 minutes or until the crackling is golden and crisp all over, rotating the tray as needed for even browning.
  • Preheat the Crisp 'N Bake Toaster Oven to 190°C/375°F on the roast/bake setting. Roast the pork for 50 minutes to 1 hour until fully cooked. To check for doneness, use a meat thermometer to ensure the internal temperature reaches 63°C/145°F or higher. Alternatively, test by piercing with a skewer - if the juices run clear, the pork is done.
  • Let the pork roast rest on a board for 15 minutes before slicing. Remove the crackling, cut into strips, and carve the meat into slices against the grain to serve.
