Ingredients:
  • 2 cups almond flour
  • 4 eggs
  • 0.25 cup Greek yogurt (such as Fage®)
  • 1 tablespoon olive oil, or to taste
Instructions:
  • In a bowl, use a mixer to blend almond flour, eggs, Greek yogurt, salt, and baking soda on high speed until creamy.
  • Heat a skillet over medium heat and coat the surface with olive oil.
  • Spoon 1/4 cup of batter into the hot skillet's center. Cook until golden brown, for about 1-2 minutes on each side. Repeat with the rest of the batter.
