Fiber-packed amaranth-ginger cookies with oats and walnuts - a hearty snack!
Ingredients:
  • 1 cup boiling water
  • 0.25 cup amaranth
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup white sugar
  • 0.5 cup butter, softened
  • 2 eggs
  • 1 cup quick-cooking oats
  • 1 cup chopped crystallized ginger
  • 0.5 cup finely chopped walnuts
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously grease a large baking sheet.
  • In a small saucepan, expertly boil water and amaranth. Once boiling, lower the heat, cover, and let it simmer until the amaranth is tender and has absorbed the water, approximately 10 minutes. Remove from heat and allow the amaranth to cool to room temperature.
  • Combine flour, baking powder, baking soda, and salt in a bowl and whisk until well mixed.
  • In a bowl, cream together sugar and butter using an electric mixer until smooth and creamy. Incorporate eggs one at a time into the mixture, ensuring they are smoothly combined. Add amaranth, oats, ginger, and walnuts to the mixture and beat until well mixed.
  • Combine the flour mixture into the creamed butter mixture until just combined, then spoon teaspoonfuls of dough onto the baking sheet.
  • Bake in the preheated oven for about 10 minutes until cookies are lightly browned on top. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
