Try these crispy, gluten-free amaranth pancakes for a delicious and memorable breakfast.
Ingredients:
  • 0.5 cup rice flour
  • 0.5 cup sorghum flour
  • 0.5 cup amaranth
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 cup almond milk
  • 0.5 cup unsweetened applesauce
  • 1 egg
  • cooking spray
Instructions:
  • Preheat the griddle over medium heat.
  • Combine rice flour, sorghum flour, amaranth, baking powder, and cinnamon in a bowl, then mix in almond milk, applesauce, and egg until just combined.
  • Grease griddle generously. Spoon batter onto griddle and cook until bubbles form and edges are dry, about 3-4 minutes. Flip and cook until golden brown, about 2-3 minutes. Repeat with remaining batter.
