Toffee almond crunch with amaretto cream paired with fresh winter fruits is a divine treat.
Ingredients:
  • 100g (1/2 cup) caster sugar
  • Strawberries, to serve
  • Pear slices, to serve
  • Dates, to serve
  • 250g mascarpone
  • 40.00 ml amaretto liqueur
  • 24.00 gm icing sugar mixture
Instructions:
  • Prepare a baking tray with non-stick baking paper. Heat sugar in a small frying pan over medium heat until it dissolves and caramelizes for about 5 minutes. Take the pan off the heat, mix in almonds until well combined. Spread the mixture on the prepared tray and let it cool for 10 minutes.
  • Prepare the amaretto cream by combining mascarpone, amaretto, and icing sugar in a bowl, stirring until smooth.
  • Crush the almond toffee by pulsing it in a food processor until it's coarsely chopped.
  • Pour the flavorful amaretto cream into a lovely serving bowl and generously sprinkle with delightful praline. Accompany with luscious strawberries, crisp pear slices, and sweet dates, if preferred.
