Amaretto olive oil cakes

Elevate your dessert game with a decadent cake featuring olive oil as the star ingredient.
Ingredients:
  • Fresh berries, to serve
  • 3 eggs
  • 215g caster sugar
  • 185ml olive oil
  • 80ml amaretto
  • 150g self-raising flour
  • 55g almond meal
  • 40.00 ml flaked almonds
  • Thick cream, to serve
Instructions:
  • Preheat your oven to 180°C. Prepare two 10 x 20cm loaf pans by greasing and lining them with baking paper, making sure the paper overhangs on the long sides.
  • In a bowl, use an electric mixer to whisk the eggs and sugar until thick and pale. Add the oil and liqueur, whisk until combined. Then gently fold in the flour and almond meal using a metal spoon. Pour the batter into prepared pans, sprinkle with flaked almonds, and bake for 40 minutes or until a skewer comes out clean.
  • Take the pan out of the oven and let it cool. Enjoy with a dollop of thick cream and fresh berries, if preferred.
