Crispy tofu cubes, marinated in zesty soy and lemon, add a satisfying crunch to a refreshing mixed salad.
Ingredients:
  • 1 (16 ounce) package firm tofu, drained and cubed
  • 2 tablespoons lemon juice
  • 6 tablespoons soy sauce, divided
  • 1 cup cornstarch
  • 2 tablespoons dry bread crumbs
  • 2 medium shallots, finely minced, divided
  • 0.5 bunch green onions, sliced, divided
  • vegetable oil for pan-frying
  • 0.25 cup champagne vinegar
  • 2 tablespoons white sugar
  • 1 teaspoon chili oil
  • 1 (10 ounce) package mixed salad greens
  • 0.5 large cucumber, chopped
  • 1 medium tomato, chopped
Instructions:
  • Combine the tofu with zesty lemon juice and a savory 2 tablespoons of soy sauce in a small bowl, allowing the flavors to meld together as it marinates.
  • In a bowl, mix the cornstarch and bread crumbs with minced shallot and half of the green onions. Coat the tofu generously with the cornstarch mixture, saving the rest of the marinade for later.
  • Heat a generous amount of oil in a skillet over medium heat until shimmering. Fry the tofu cubes until beautifully golden brown on all sides, then transfer to a paper towel to drain.
  • Combine the leftover marinade with vinegar, 4 tablespoons of soy sauce, sugar, and chili oil. Set aside. Combine salad mix, cucumber, tomato, tofu cubes, and the rest of the shallot in a large bowl. Pour the dressing over the salad and mix well.
