Deliciously rich lemon scones with sweet glaze, perfect for brunch or tea.
Ingredients:
  • 3 cups all-purpose flour
  • 0.33333334326744 cup white sugar
  • 1.5 teaspoons baking powder
  • 0.33333334326744 teaspoon salt
  • 0.75 cup cold butter, cut into pieces
  • 9 tablespoons milk
  • 3 tablespoons lemon juice
  • 2.5 teaspoons lemon zest
  • 1.5 teaspoons vinegar
  • 2 cups confectioners' sugar
  • 0.33333334326744 cup butter, melted
  • 2.5 tablespoons lemon juice
  • 2 tablespoons water, or as needed
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfectly cooked dish.
  • Prepare the scones by combining flour, sugar, baking powder, baking soda, and salt in a large bowl. Use 2 knives or a pastry blender to cut in cold butter until the mixture looks like coarse crumbs. In a separate small bowl, whisk together milk, lemon juice, lemon zest, and vinegar, then pour it into the flour mixture and mix until the dough is moistened.
  • Transfer the dough onto a lightly floured surface and knead briefly for about 5 to 6 turns. Flatten or roll the dough into a 1-inch-thick round shape. Cut it into 10 wedge-shaped pieces and place them 1 inch apart on a baking sheet.
  • Bake in the preheated oven until the bottom edges turn golden brown, about 12 to 15 minutes. Allow the scones to cool on a wire rack for 15 minutes.
  • In a bowl, combine confectioners' sugar, melted butter, lemon juice, and vanilla until smooth. Gradually add water, 1 tablespoon at a time, to create a glaze. Drizzle the glaze over the warm scones.
