Celebrate Fourth of July with a stunning American Flag Pie in a sheet-pan, featuring a homemade crust and delicious blueberry and strawberry filling.
Ingredients:
  • Crust:
  • 3 1/2 cups flour
  • 3 1/2 teaspoons sugar
  • 1 1/2 teaspoons kosher salt
  • 14 ounces butter (3 1/2 sticks), cut into cubes
  • 7/8 cup sour cream (that's 3/4 cup plus 2 Tbsp)
  • Strawberry filling:
  • 3 1/2 pounds strawberries, hulled, quartered
  • 1/2 cup sugar
  • 2 teaspoons orange zest
  • 4 tablespoons cornstarch, flour, or minute tapioca
  • Blueberry filling:
  • 1 pint blueberries (about 0.6 lbs, 280 g)
  • 3 tablespoons sugar
  • 1/4 teaspoon cinnamon
  • 2 teaspoons lemon juice
  • 2 tablespoons cornstarch, flour, or minute tapioca
  • Egg wash:
  • 1 teaspoon of milk or cream
Instructions:
  • Prepare the pie dough: Cube the butter and let it sit out for 10 minutes. In a large mixing bowl, combine flour, sugar, and salt. Add the butter and mix until it resembles coarse meal. Incorporate the sour cream with a fork and knead until a ball forms. Divide into 3 equal balls, shape into discs, wrap in plastic, and chill for 1 to 2 hours or overnight.
  • Prepare the berry fillings: Place quartered strawberries in a large bowl and mix with sugar, cornstarch (or flour, or minute tapioca), and orange zest. In a separate smaller bowl, combine blueberries with sugar, cinnamon, lemon zest, lemon juice, and cornstarch (or flour or minute tapioca).
  • Prepare the bottom crust: Line a 13- x 18-inch rimmed sheet pan with parchment paper. Allow two dough discs to soften for 10 minutes at room temperature. Roll out the first disk on a floured surface to 11- x 17-inches, placing it on half of the sheet pan with edges hanging over. Repeat with the second disc on the other half of the pan. Fold the edges, crimp, and shape any excess dough into a rope to create a barrier for the fillings. Chill in the refrigerator.
  • Create a luscious egg wash by combining the egg white with a splash of milk or cream in a small bowl.
  • Prepare stars and stripes: Allow the third rectangular disc of dough to sit at room temperature for 10 minutes to soften. Roll out the dough into an 18-inch lengthwise rectangular shape. With a dinner knife or pizza wheel, cut out 2 stripes measuring 18 inches by 1 1/2 inches, and 2 stripes measuring 10 inches by 1 1/2 inches. Use a star-shaped cookie cutter to create stars. Arrange the stars and stripes on a baking sheet. Brush them with egg wash and refrigerate until ready.
  • Preheat the oven to 450°F.
  • Assemble the pie: Lay out the strawberries to create the red and white stripes. Place the blueberries in the corner for the stars. Place strips and stars made of dough on top of the berries to form the flag. Chill for 10-15 minutes before baking.
  • Baking: Begin by baking at 450°F for 15 minutes. Then cover loosely with foil, reduce the heat to 375°F, and bake for an additional 45-55 minutes or until the filling bubbles. Remove from the oven and cool for at least an hour before serving.
