Celebrate with a 4th of July no-bake cheesecake featuring a chocolate crust, creamy filling, and fresh berry toppings.
Ingredients:
  • 1.5 cups finely crushed graham cracker crumbs
  • 2 tablespoons unsweetened cocoa powder
  • 6 tablespoons butter, melted
  • 1 cup cream cheese at room temperature
  • 1 cup mascarpone cheese at room temperature
  • 2 teaspoons grated lemon zest
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla extract
  • 0.33333334326744 cup white sugar
  • 1.25 cups cold heavy whipping cream
  • 20 large fresh strawberries, hulled and halved lengthwise, or as needed
  • 24 large fresh blueberries, or as needed
Instructions:
  • Mix graham cracker crumbs, 1/4 cup sugar, cocoa powder, and melted butter in a bowl until evenly incorporated and crumbly.
  • Press the crust mixture into a 9x11-inch baking dish, smoothing it out evenly. Cover with plastic wrap and chill in the refrigerator until firm, approximately 30 minutes.
  • Combine cream cheese and mascarpone in a bowl until fully mixed. Add lemon zest, lemon juice, and vanilla extract, and stir well to incorporate.
  • In a separate metal or glass bowl, whip 1/3 cup sugar into the whipping cream until fluffy with soft peaks. Gently fold the whipped cream into the cream cheese mixture until the filling is soft, fluffy, and well combined.
  • Spread the filling over the graham cracker crust, ensuring it is smooth. Gently tap the pan on a surface to settle the layers. Cover the pan tightly with plastic wrap and refrigerate for at least 3 hours until chilled and set.
  • Place strawberry halves in a horizontal line along the bottom edge of the cake, with the pointed bottoms facing to the right. Then, start another row of strawberry halves at the top right corner, arranging them with the bottoms pointing right, covering about 2/3 of the cake length.
  • Layer more strawberry slices on top of the bottom stripe, then add 3 additional stripes, each stretching the length of the cake. Place another row of strawberries below the short stripe to create a square space for the blue field of stars.
  • Arrange blueberries in rows, starting in the upper left corner with blossom ends facing up. Fill the square completely with blueberries. Cut the cake into squares before serving.
